  1. Heat Oven to 425° and bake tater tots about 20 minutes.
  2. While tater tots are baking brown sausage.
  3. Add minced garlic to the sausage.
  4. Boil some water and cook frozen spinach. I only used about a handful.
  5. Add diced ham and chopped up mushrooms. Saute until mushrooms look sauteed and sausage is cooked.
  6. Turn off meat mixture. Stir in spinach and about a cup of salsa (or rotel).
  7. Pour meat mixture into a greased casserole dish.
  8. The tater tots should be done. Little crispy in top. Layer the tater tots on top of the meat mixture.
  9. Beat eggs. I added a little bit of water and pepper.
  10. Pour eggs over the top of everything.
  11. Cover with cheese slices.
  12. Bake 20-25 minutes.
  13. Take out and let sit for about 5 minutes. So Bomb!! I know my husband will add some Tapatio. Enjoy!
