  1. Prepare 6 medium Boneless, Skinless Chicken Thighs
  2. You need 1 large Yellow Onion, sliced in wedges
  3. Get 5 medium Red Potatoes, quartered
  4. Provide 1 Lime, sliced in half and juiced
  5. You need 13 cup Olive Oil
  6. You need 7 clove Garlic (skin on and crushed)
  7. Use 14 cup Paprika
  8. Prepare 3 tbsp Honey
  9. Provide 1 tbsp Lemon Pepper Seasoning
  10. Take 3 tbsp Oregano
  11. You need 1 Salt and Pepper
Steps to make Chicken and Potato Bake:
  1. Mix all of ingredients in a large mixing bowl (including lime and lime juice)
  2. Marinate the chicken, veggies, and lime mixture in the fridge for at least an hour. (Overnight is best)
  3. Preheat oven to 400°F Fahrenheit
  4. Grease a baking dish and lay bed of potatoes, onion, garlic, and lime haves. Add chicken on the top.
  5. Bake for 60 minutes, or until the chicken and potatoes are cooked through

If desired, brush the top of each chicken piece with a little olive oil and season with salt and pepper. Cut the chicken breasts into chunks, add add the remaining olive oil, salt, pepper, paprika and garlic granules. Spread into a prepared baking dish in a single layer. Place chicken on top of potatoes, arranging potatoes around chicken. Pour the mixture over the chicken and potatoes, and mix until well coated.
