The ingredients needed to make Okonomiyaki:
- You need 200 g cabbage (mince into 1 cm cubes)
- Take 100 g pork slices (belly is good but use a part suited to your taste)
- Use 1 Tbsp red pickled ginger, chopped (to taste)
- Take *80 g flour
- Take *1⁄2 tsp salt
- Use *1 tsp sugar
- Get 1 tsp sauce
- Provide 120 ml dashi (or 120ml water + 2 tsp dashi powder)
- You need 1 egg
- Take 1 Tbsp sesame (vegetable) oil
- Use For topping (as much as you like):
- Get Dried bonito flakes
- Take Green laver/aonori
- Provide Mayonnaise
- Take Worcester sauce
Instructions to make Okonomiyaki:
- Sift the * ingredients in a bowl and pour soy sauce and dashi (in several divided times) and mix well. If you have time, leave to rest for 2-3 hours in the fridge.
- Put cabbage, red pickled ginger into the mix from step 1 and mix 20 times. And then put in the egg and mix 10 times.
- Heat the oil in a frying pan over medium heat and pour in the mixture. Place slices of pork on top and cook it for about 5 mins with lid until well browned and flip over.
- Cook on the other side for 5~6 mins with lid. And flip over again and cook for 2~3 mins without lid.
- Pour Worcester sauce and mayonnaise over it and garnish with dried bonito flakes and green laver as much as you like.
