The ingredients needed to prepare Stewed Chicken (Jamaican Inspired):
- Use 1 Whole Chicken (cut up) or whatever parts you like.
- Use 1 each Red, green pepper
- You need 1 each Onion
- Use 1 each Thyme sprigs
- Provide 1 Salt and pepper
- Use 1 tsp Hot pepper sauce
- Take Sugar
- Get 2 clove Garlic
- Take 1 each Habanero pepper
- Take 2 each Green onion or scallion (only white part)
- Use 1 tbsp Ketchup
- Take 2 cup Hot water
- Prepare 1⁄2 cup Cooking oil. (Olive oil can be used too)
Steps to make Stewed Chicken (Jamaican Inspired):
- Wash chicken with vinegar. Pat dry. Cut up onions, peppers and set aside.
- Season chicken with salt, pepper, sugar, garlic, scallion. Marinate at least an hour.
- Remove scallion from chicken. Heat oil. Fry chicken until golden brown on both sides. Approximately 3-4 mins per side.
- Remove half the oil from pan. Put red and green pepper, scallion and onion in oil to fry. Onions will be translucent. (I sometimes add minced garlic to this part as well for extra flavor.)
- Add thyme, hot pepper sauce, ketchup, habanero and 1 cup of hot water and salt. Let this simmer for 5-10 mins. Taste for flavor. You may need to add more salt. Or other seasonings of your choice
- Add chicken to gravy. Add remaining cup of hot water and turn heat on low. Cover pan and let cook for 30 minutes or until tender and gravy thickened
- Serve with rice or veggies.
