The ingredients needed to prepare Stewed Chicken:
  1. Get 1 whole chicken- already prepared
  2. Prepare 1 large onion - diced
  3. Take 2 large tomatoes- diced
  4. Get 10 mls oil
  5. Prepare Salt tottaste
  6. Provide 1 tbsp curry powder
  7. Prepare 1 tbsp chicken masala
Instructions to make Stewed Chicken:
  1. Divide the chicken into small sizes. Wash and put to boil.
  2. Add salt and while boiling.
  3. You can add curry powder to boil with the chicken.
  4. When boiling do not add too much water instead add 1 cup or less.
  5. When water has dried up add in onions and stir until soft.
  6. Add in tomatoes stir until the tomatoes have broken down.
  7. Then add chicken masala and stir, you can oil if the chicken starts to stick at the surface.
  8. Add water and allow to boil for a few minutes.( do add too much water for soup just add enough.

This is not really a traditional trini stew chicken. it looks too pale. tradition stew chicken is normally a deeper brown and that is because the sugar is allowed to brown and not just melt as instructed by this recipe. then the butter is absolutely unnecessary. with the vegetable oil and cocnut milk you are just adding too much fat without adding flavour. I never made brown stew chicken or rice & peas, but thanks to you they both turned out fabulous.
